TIL Cornicione is the Italian word for the edge or rim of a pizza. The cornicione should be an airy, raised edge, that’s crunchy on the outside and light and soft on the inside, typically found on a Neapolitan pizza. The crust is the whole bread part of the pizza, not only the edge.
