TIL Ice cream must contain 10% dairy milkfat and no more than 100% overrun (amount of air whipped into the base, doubling volume) to prevent unscrupulous manufacturers selling an ice cream product that is mainly air instead of cream. For example, gelato is generally more dense due to 20-30% overrun.
